Munggo Guisado
Mung Bean Stew
Serves 6
Ingredients
5 cloves of garlic, minced
0.5 cup of pork tenderloin, cubed
7 oz of dry mung beans
0.5 cup of tomatoes, chopped
0.5 cup of onions, chopped
2 cups of fresh spinach
2 stalks of celery, chopped into quarter-inch half-moons
1 cup of shrimp
1 tablespoon of patis
1 tablespoon of vegetable oil
Steps
Cook mung beans in a pot with 4 cups of water until most water has evaporated and mung beans have softened. Mash beans in the pot and set aside.
In a skillet, simmer pork in water until the water is gone. Add vegetable oil and sauté pork until it is lightly browned.
Add garlic to the skillet and sauté until the garlic is aromatic.
Add tomato, onion, and shrimp to the skillet. Sauté for about two minutes.
Transfer the sauteed pork, shrimp, and vegetables into the pot with mashed mung beans. Add celery.
Mix all ingredients. Season with pepper and patis and cook under medium-high heat for a minute.
Add 1.5 cups of water to pot (more or less water depending on your desired consistency). Boil until celery is tender.
Add spinach and cook until the munggo boils again.
