Oats caldo
A Healthy Twist on Arroz Caldo
Serves 6
Ingredients
1 to 2 lbs skinless chicken (can be cubed chicken breast or bone-in thighs/drumsticks)
1 carrot, diced
1.5 cups of rolled oats
5 cloves of garlic, minced
1 tbsp of ginger, sliced
Half of a yellow onion, chopped
0.5 tbsp pepper
1 tbsp patis
Green onion for garnish, chopped
Steps
In a large pot, sauté garlic, ginger, and onion in vegetable oil until aromatic.
Add chicken and carrots to pot and sauté for about two minutes more until chicken is white on the outside.
Season chicken with pepper and patis in the pot. Continue to sauté.
Add 6 cups of water into the pot and bring to a boil.
Add additional water until oats caldo reaches desired consistency.
Garnish with green onions and fried garlic and serve with boiled eggs.
What makes this healthy?
Traditionally, sweet glutinous rice is used to make arroz caldo. By replacing rice with oats, you introduce whole grains into your diet.
Oats are rich in fiber, which can slow digestion, prevent overeating, and prevent sharp rises in blood sugar.
Skinless chicken is used, removing extra fat.
Minimal salt is added.
