Squash Soup

Serves 6

Ingredients

  • 1 kabocha squash

  • 1 tbsp patis

  • 1 cup of reduced-sodium chicken broth

  • 2 cups of spinach

  • Half of a yellow onion, sliced

  • 4 cloves of garlic, minced

  • Olive oil

  • Pepper, to taste

Steps

  1. Remove stalk of kabocha squash.

  2. Boil kabocha squash in pot of water for about 20 minutes until soft.

  3. Peel skin from kabocha squash. Slice squash into smaller pieces and discard seeds.

  4. In a bowl, mash the pieces of squash.

  5. Discard water in pot used for boiling the squash. Sauté onions and garlic in olive oil at medium heat.

  6. Add the mashed squash, patis, pepper, and broth. Heat under a simmer, stirring occasionally.

  7. Add more water until you reach your desired consistency.

  8. Add spinach and cook until spinach is soft.

Optional: Seeds from the kobacha squash can be a healthy snack! Clean and dry the seeds, season with salt, pepper, and garlic powder, and roast in the oven at 325F for about 20 minutes.

Low-sodium chicken broth is used and a small amount of patis are used.
