Chicken Tocino with Eggplant
Sweet cured chicken with eggplant
Inspired by FEATR’s video on hypertension.
Serves 4
Ingredients:
2 lbs. chicken breast, sliced thinly
1 eggplant, sliced lengthwise
5 cloves of garlic, minced
2 tbsp brown sugar
1/2 cup coconut aminos
Olive oil
Green onion, chopped for garnish
Steps:
Mix brown sugar, coconut aminos, and garlic in a bowl. Add chicken slices and marinade for at least 30 minutes.
Fry marinated chicken on a pan under medium-high heat. Set chicken aside once it is caramelized and fully cooked.
With remaining marinade, fry sliced eggplant on the same pan. Cook for about 5 minutes until eggplant is tender.
Serve with a fried egg and brown rice. Garnish with green onion.
What makes this healthy?
Coconut aminos is used as a substitute for soy sauce. It has much less sodium than soy sauce, making it ideal for people with hypertension!
Eggplant is included in a dish that traditionally only contains rice, egg, and meat. Vegetables are a great way to include healthy carbs in our meals. The more colorful your plate, the better!
